It is macerating for a long time, 30/35 days but with few crushed to preserve fresher and elegancy of the grenache from the high. Once the two fermentations are finished, we put it in 300, 600 and 1000l ceramic jars. for 18 months. 100% Grenache. -- This 100% Garnatxa comes from Guixà in the village of La Figuera, where the vineyards sit among the highest in the appellation at 600 meters, rooted in white, limestone-rich clay. Fermentation took place with significant stem inclusion in open-top 500L barrels, followed by 18 to 20 months of aging in unlined, locally fired ceramic amphoras. The result is a wine with 13.7% alcohol that captures exactly the profile they sought: floral and perfumed, fine-boned and velvety, with elegant tannins and an ethereal freshness. Remarkably, it shows no trace of the year’s heat or drought. Just 1,548 bottles were produced.
