The Preyna This vintage is a blend of Cinsault and Grenache from Saint-Julien-en-Saint-Alban. The blend which may vary slightly depending on the harvest is approximately 75% Cinsault and 25% Grenache. When vatting, the Grenaches are destemmed and the Cinsaults in whole clusters. Vatting lasts about a week - vatting time depends on the speed of fermentation. After pressing, the wine will finish fermenting in concrete vats and will be drawn off once to clean the wine to spend the winter in concrete vats. The wine is bottled in spring without filtration.
