Wine Tasting Notes
The 2023 Cervaro della Sala opens with pink grapefruit, lemon zest and white flowers framed by a creamy note of white chocolate and subtle toast. Full-bodied yet vibrant, it shows real tension and a silky texture in the classic Burgundian mold. A salted-citrus finish with a hint of lemon-peel bite adds depth, and the wine will age gracefully for a decade.

Winery/Producer Highlights
Castello della Sala (Marchesi Antinori) — Castello della Sala is a medieval castle near Orvieto in Umbria, acquired by the Antinori family in 1940 and dedicated to white wines. Cervaro, first made in 1985, was one of Italy's pioneering barrel-fermented whites, blending Chardonnay with a small share of the local Grechetto. Grown on fossil-rich clay and limestone soils, it ferments and ages in French barriques before further bottle aging.
